Recipe: Single Hill Skyfinder Fresh Hop Hazy IPA

Zach Turner, cofounder and general manager of Single Hill Brewing in Yakima, Washington, shares this recipe for a “a soft and lively fresh hop IPA designed to showcase our favorite early season hops,” he says. “Strata and Centennial are picked about a week before Simcoe, which is picked just in time for the dry hop.”

This recipe hails from a brewery that’s nurtured a strong focus on fresh-hopped beers, taking full advantage of its location: Yakima, Washington. While few breweries enjoy that proximity to the Yakima Valley, the good news is that fresh hops are increasingly available year-round in various ways and forms. This recipe offers a glimpse of Single Hill’s wet-hopping process, using the mash tun as a hopback to manage a voluminous load of fresh-picked wet hops (Centennial and Strata, in this case).
